Description: Our Apple Brandy is made from a blend of more than a dozen varieties of apples grown in the cool, coastal mountains of Northern California. These include local Hauer apples and crab-apples. The base cider for the brandy is inspired by the ciders of the Basque coast and is made using traditional French distillation and aging techniques similar to those used for Calvados. The resulting spirit is aged in barrels for nearly a decade in order to soften it and bring out the subtle, apple flavors. This lengthy aging process allows the brandy to develop a rich, supple character that is characteristic of the finest apple brandies.
