Description: At Matchbook Distilling, we’re thrilled to unveil a special project born from our collaboration with the Culinary Institute of America: Maillard, a liqueur inspired by the rich, complex flavors created by the Maillard reaction. This chemical process, which occurs when sugars and amino acids react under heat, is responsible for the golden crust of bread, the depth of roasted coffee, and the irresistible aroma of toasted granola. Our goal was to capture this alchemy in a bottle, starting with granola as the muse. By browning 400 lbs of butter—a labor-intensive task that enhanced its nutty, caramelized flavors—we created a foundation that would ultimately shape this unique liqueur.

Back at the distillery, we fermented organic oats from Maine and distilled them through copper pot-column stills before macerating the browned butter with the oat mash, a process known as fat washing. To add depth, we also roasted oats and incorporated a touch of brown sugar. The result is Maillard, a liqueur that blends buttery, nutty, and caramelized flavors with a rich, roasted profile. This limited-edition release celebrates the science of cooking and the joy of flavor creation, with only a few hundred bottles available. We’re excited to share this labor of love with you and invite you to experience the magic of the Maillard reaction in every sip.
