Description: Building Matchbook Distilling over the past five years has been an exciting journey, but when a close friend asked for a road trip through the Yucatán, it was an adventure that had to be embraced. During the trip, we explored Merida and the picturesque fishing village of Ría Lagartos, nestled within a national park full of diverse ecosystems and wildlife. Along the way, a serendipitous stop at a hidden paleta shop led to a mango popsicle experience that inspired the creation of our new spirit. Infused with chili, lime, and sugar, it brought together the essence of the Yucatán and Mexican street food culture, leading us to craft Flamingo Riviera, a mango-based spirit with a bold chili profile. After a year of macerating fresh mangos, Persian limes, black limes, and a blend of chilis, this 20% ABV spirit captures the essence of summer with a spicy, tangy, and smoky flavor. Perfect for splashing into cocktails like the Flamingo Daiquiri, it’s the ultimate tribute to our Yucatán adventure.
