Description: To create our gin, we begin by using 100% pure malted barley that is mashed in-house and distilled in a pot still, just like our Single Malt series. We then add a generous amount of juniper and a variety of hand-sourced botanicals from Tel Aviv’s spice market, including origanum syriacum (Za’atar), lemon peels, orange, chamomile, lemon verbena, cinnamon, and black pepper. These botanicals are left to rest in the still for 48 hours before being distilled for a third time in a 250-liter pot still for extra smoothness. The resulting gin is a unique and flavorful spirit that captures the essence of the spices and botanicals used in its production.
