Description: CANAVIAIS is a vibrant cachaça crafted at the Rech Distillery in Santa Catarina, Brazil, using Hawaiian and RB12 sugarcane varieties cultivated on Florianopolis island. The sugarcane undergoes open top fermentation for up to seven days and is proofed with water drawn from a well fed by a nearby waterfall. This results in a unique spirit bursting with fruity and umami notes such as pineapple fiber, ripe pear, dried papaya, and green olive. It boasts candied tropical fruit flavors of pineapple, banana chips, and guava intertwined with saltwater taffy, while hints of pink peppercorn, caramelized pineapple, and jasmine linger on the palate. CANAVIAIS carries a 40% ABV and is ideal for crafting classic Caipirinhas or any cocktail that benefits from the rich, sugarcane-derived character of cachaça.
